Several times a year, the Physicians Committee for Responsible Medicine (PCRM) – an advocacy group comprised of medical professionals and laypeople, “working together for compassionate and effective medical practice, research, and health promotion” – holds a 21-Day Vegan Kickstart challenge. The program provides participants – omnivores, vegetarians, and vegans alike – with tips, tools, and information to help them transition to a vegan diet, whether for three weeks or (hopefully) a lifetime. Newbie and old school vegans alike can also benefit from the 21-Day Vegan Kickstart, which provides plenty of inspiration and support to help to remix a tired routine.

Although this isn’t to suggest that a vegan diet is necessarily one of deprivation and boredom. Quite the opposite, in fact – a point which is underscored by the 21-Day Vegan Kickstart itinerary:
