OMFG Willy, what a cutie! When I first saw his photo in thumbnail form, I thought for sure it was one of those admonishing PSA listings featuring a porcelain cat or stuffed animal or something. (Which I adore, don’t get me wrong; I say “admonishing” in the nicest way possible, cause sometimes a little scolding is necessary!) But no! Willy is a cat, a real, flesh and fur cat! With the finest silver fur and most gorgeous green eyes you’ll ever see. All kinds of adorable!

Willy is an exceptionally sweet little boy. He loves to be held and gives lots of kisses; he is a serious lap cat!! His estimated birthday is August 1st. He has a little bit of a ‘tic’ which is neurological, but you can barely notice it and he certainly doesn’t seem to. He is neutered and ready for his purrmanent home. His adoption fee is $85.00 with an approved application. He does great with dogs and other cats.

You can visit our adoptable cats and kittens on Saturdays from noon-five at our adoption Center located at Mariposa Veterinary Center. Mariposa Vet Clinic is located at 13900 Santa Fe Trail Drive in Lenexa. Not every animal attends every adoption so always call or e-mail ahead to confirm that a particular animal will be present. Since this attractive little youngster breaks with my tradition of mostly featuring older and “special needs” animals in this here space, I’ll also point you to Blue Skye Adoptions’s other residents – 53 in total – many of whom are older felines. Kittens may be tempting, what with their new life smell and all, but older cats have got it goin’ on, too! Sure, Willy here is the dictionary definition of cuteness – but I doubt he has the more refined manners of, say, a Princess or a Millie. Just think about it, mkay?

Recipe: Thin Crust Mozzarella Pizza

Another weekend, another vegan pizza – and the search for the perfect thin crust recipe continues! (Or at the very least a serviceable thin crust recipe!) Unlike the last thin crust pizza I shared with y’all, this one actually does have some semblance of thinness about it. Not as thin as a piece of pita bread, but at least half the size of the puffy, fluffy white pizza dough we normally use. Also: delicious and relatively easy to make. No complaints here, but…

…as I said earlier, the search for the perfect thin crust pizza continues!

 

Thin Crust Mozzarella Pizza

Ingredients

2 cups all-purpose unbleached flour
1 package active dry yeast (or pizza yeast)
3/4 cup warm water (105°F-115°F)
1/2 tsp. of salt
2 tablespoons extra virgin olive oil

Optional: spices to taste (e.g., cumin, basil, cayenne pepper, thyme, oregano, red pepper, tomato powder, chili powder, ground flax seeds, and/or nutritional yeast, to name a few)

Cornmeal or cooking spray with which to coat the pizza stone or pizza pan

The toppings of your choice: red sauce, nondairy cheese, vegan meats, nuts, seeds, fruits and/or veggies

(The pie pictured above sports red sauce, mozzarella Follow Your Heart cheese, Lightlife Smart Pepperoni, carrots and sundried tomatoes.)

Directions

1. To make the dough, dissolve yeast in warm water and set aside for 5 minutes. In a large bowl, whisk together flour and salt. Make a well in the center of the flour and add the yeast mixture and olive oil.

2. Stir the dough until it begins to form a ball and pulls away from the sides of the bowl. Transfer the dough to a lightly floured work surface and knead for 6-8 minutes or until the dough becomes smooth and elastic. Add a light dusting of flour if the dough is too sticky to knead (or oil your hands with olive oil).

3. Brush a large, clean bowl with olive oil. Place the dough in the bowl and brush with oil. Cover with a damp, lint-free towel. Allow to rise in a warm place, draft-free place until doubled in size (about 90 minutes).

4. When you’re ready to assemble and bake your pizza, preheat the oven to 425 degrees F.

5. Using a rolling pin, roll the dough onto a pizza stone or pizza pan lightly dusted with cornmeal. When you’re done shaping the dough, add your toppings: sauce, veggies, “meat,” cheese, fruit, nuts, etc.

5. Bake at 425 degrees, for between 15 and 20 minutes for a single pizza, or 30 minutes for two pizzas.

6. Enjoy!

Find-a-Friend Friday: Smudge and Poppy

People! Did you know that, at any given time, there are dozens of rabbits available for adoption in the KC area? It’s true! While dogs and cats may represent the majority of nonhuman animals awaiting adoption in shelters and rescue programs, “pocket pets” (not to mention farmed animals) need love too! If you’re looking to adopt a rabbit, the best places to start are LJ’s Briar Patch and the Missouri House Rabbit Society – but rabbits can turn up most anywhere. The Lawrence Humane Society frequently features smaller animals, like rabbits and rats, and currently there’s even one rabbit in the Kansas City Animal Shelter (say hi, Bullseye!). That’s no place for a bunny now, is it?
